This dish was developed (or popularized) by Paul Prudhomme.
Many years ago, he had it on Commander's Palace menu with 3 different stuffings inside of the 3 different fowls.
Madden had it there when he covered a Saints' game and made it part of his Thanksgiving repertoire for a while.
There are butchers that sell this over the Internet (with the stuffing) and you cook (or maybe just reheat) it at home.
Because it is a 90% boned preparation, all you have to do is plate it and slice it at the table.
