| Beef is definitely king in Texas, but pork is not unheard of. I lived in Texas as a young adult, and the volunteer fire dept that I was a member of, did a pig picking every summer. I actually kept my Texas residency until I retired from the Coast Guard, and was forced to become a citizen of the People's Republic of Maryland. ;-)
