I would say most of the Chinese food you find here in the US is not real Chinese. Almost all of it is a westernized version of something remotely Chinese. One thing in that article that stands out is the comments on vegetables. I've never seen my mother serve veggies as a side dish before. In every meal my mom would make, half of it was some kind of veggie or a mix of them. In our house we were not allowed to pile loads of meat or fish on the plate and ignore the veggies.
