The show started with the audience giving Alton a rousing round of applause then he went right to work. But first introduced his culinary director, Tammy Cook, and said all of his recipes go through her approval. So it’s her fault if something doesn’t taste good.

First up was aerosol cheese. Alton asked how many of us used the stuff then he told about how he makes his version at home. He uses heavy whipping cream, powdered cheese, smoked paprika and he whisked everything in a pitcher. Then he dropped the whisk on the floor (on purpose) and poured the cream into a nitrous oxide whip cream dispenser. Next he brought out a handheld smoke infuser. Lots of bong/drug innuendos flew here. The smoke added to the cream mixture, Alton clamped on the lid to the cream dispenser and was ready. He told the cameraman following him that it never blows up and then promptly scared the camera guy by making a noise. The camera guy played along and fainted. Then Alton acted like he was going to spray cheese on him, but stopped because it was an expensive camera.

The second food was beef short ribs. And German-style cut of short ribs called flanken. He put these in a sous vide bag with tomato paste, Worcestershire sauce and some other spices. Cooked in an immersion circulator for 20 hours (Tammy really did it the day before). Alton plated both bags of ribs, then teased the group who got to sit on stage with the ribs. He told them he couldn’t serve them because he did have a catering license. Alton moved the plate of ribs to the front of the stage and told everyone they were up for grabs after the show.

The last item was Red Bull sorbet. Alton said he can’t drink the stuff because it makes him too jittery but someone he knows wanted him to make sorbet from it. He played around and came up with his concoction. But it needs liquid nitrogen because the Red Bull and the simple syrup makes it have so much sugar that an ice cream freezer would never be able to freeze it. He said it was more like a Red Bull slurpee. So he used the liquid nitrogen and whipped in a mixer.

During the whole demo, Alton paused to take questions from the audience. Someone asked about the Wii Iron Chef America game. Alton said he is doing the commentator voice AND a “fake” Iron Chef’s voice. He wouldn’t tell us which Iron Chef he is doing.

The best question started from some guy in the audience who asked about dinner parties and potluck dinners, then drifted into Food Network being like MTV, then asked Alton what he brings to the FN potluck dinner. At this point Alton was confused and the guy wasn’t doing a good job asking the question and told Alton he had even wrote it down. So, Alton goes into the audience takes the guy’s index card, starts reading (it still didn’t make sense) and Alton starts this whole thing on if FN had a potluck dinner and how all of the chefs/host would act. I almost fell out of my chair laughing so hard.
