Maybe you just need to cook the beans a little longer. Soup is really a very good way to combine vegetables. If you use more of the ones you really like then the others are just background flavors, you will taste the ones you like more.

You say you like canned tomatoes have you tried a bruchetta on the lettuce? I use that on salad sometimes. You can make it from canned tomatoes or buy a commercially made kind. I like some of the ones that you get in the refrigerated section. I am not a big fan of "raw" tomatoes either. The canning process actually cooks them to a certain extent. You can get whole plum Italian tomatoes in the the international section of the grocery store. I use those sometimes to make bruchetta myself.

The lettuce topped with a little bruchetta and grated Parmesan or Asiago cheese is some thng I enjoy.

Now I am hungry.
