We have a Crawfish Festival in town every August. They use to get them out of the river, but, yuck, no longer! Too polluted, sorry to say. Now, they get them from a farm.
They have a Crawfish eating contest and many times it is won by someone who is from Louisiana and either visiting or living here (Pacific Northwest). It's painful to watch.
