Isilzha, I agree, Robert is one chef we need to see more of. I'd like to see him be an Iron Chef...officially, that is. The man has what it takes.

Now...as far as what I'd like to see...hmmm

Thai cooking. I don't know of any chefs on TV that do that on a regular basis. That kind of show would introduce us to the myriad of curries, and explain unusual items like KAFFIR LIME LEAVES, NAM PLA, and the various styles of cooking in the Thai fashion.

Real Mexican cooking. Bayless would be a good one. He'd take us through the creation of TAMALES, ENCHILADAS, CARNE GUISADA, and MENUDO.

Filipino cuisine. Things like ADOBO, PANCIT and LUMPIA (with its unique dipping sauce) come to mind...

I'll come up with more after I think awhile...
