| He used to be cocky and have an arrogant air about him but that was back in the day. I agree, I think he's mellowed since he's gotten married and I actually like watching his shows now.
There was one show where his wife made some of her Texas fare, one recipe being a roast beef that (I think) had a rub on it and after it was roasted was blanketed in foil and sat for an hour. She claimed it would turn out perfect (rare) every time. I printed off the recipe but I guess I forgot about it.
