I've been wondering...
...are the cakes edible?
'Cause they sure don't look it.

I am going to say yes! They had better be, and they had better taste good for as much as they cost.

I am guessing you are talking about Ace of Cakes, there is always a portion of the cake that is edible, some of the stuff in the cake is for support or decorations and most likely you would not want to try eating it. I have seen frosted styrofoam just for display, not for consumption. At least this is what I have gathered from watching the show.
prepared with passion and served with love !

Someone has mentioned here before that a lot of people will order a sheet cake as well.

There was one where Geoff spent all this time working on a cake I think it was a jeep, then he brought it and the guy started tearing into it. I felt bad for Geoff.
Those who forget the pasta are condemned to reheat it.

It would be so difficult for me to work so hard to create something...put so much time and effort into it...only to have it destroyed.

It looks like the rice crispy sculptures are not really intended for eating. I know that often when there are budget concerns (probably wouldn't be ordering from Charm City Cakes) most of a wedding cake can be made of frosted and decorated Styrofoam. The bottom tier is usually real for the bride and groom to cut (sometimes the top is real as well for them to save), and there are large sheet cakes in the kitchen for the guests! When I worked in a grocery store that made wedding cakes we could add a plain full sheet for under $40 that would add around 80 servings, this many servings of the actual wedding cake would have been over $300.
I would say that the cakes they make that are not sculptures are entirely edible, especially for the prices people are willing to pay.
