I do it all myself and do the onions and celery first so by the time I'm ready to combine them, they aren't warm at all. And I use chicken broth, not butter other than what I use to do the onions and celery. I guess I never thought of it as hot just adding semi-warm veggies and room temp chicken stock.

Food safety comes first.
Can't enjoy the bird if your stomach is upset.

Celery and onions out of that list are the only things I would even consider putting in stuffing. No way to the rest.

I still maintain, I've stuffed all my life (or had a stuffed bird) and been fine. If it ain't broke, don't fix it!!
