Got sick as hell, last Thanksgiving
| OMG, so did we. Daughter brought home a stomach virus last year. I cooked for days and then no one could eat - we were all down for the count.
This year, we're going out to eat at one of the fancy hotels at Disney. |

Food poisoning or a stomach virus? What a choice?

It's from the 1970's Betty Crocker Cookbook...pretty standard, but very good.
Clove...I do use a thermometer to test the stuffing for doneness as well as using one for the turkey. | I do it all myself and do the onions and celery first so by the time I'm ready to combine them, they aren't warm at all. And I use chicken broth, not butter other than what I use to do the onions and celery. I guess I never thought of it as hot just adding semi-warm veggies and room temp chicken stock. |

That's the way to go.
Food safety comes first.
Can't enjoy the bird if your stomach is upset.

In fact the only thing that doesn't get cooked first, is the sourdough bread. | Celery and onions out of that list are the only things I would even consider putting in stuffing. No way to the rest.
I still maintain, I've stuffed all my life (or had a stuffed bird) and been fine. If it ain't broke, don't fix it!! |
