So, what is an appropriate accompaniment for squash soup?

Squashed sandwiches! Nope, there's no squash in them but they have been squashed flat. It's a panini and it is loaded with good stuff - shredded cheddar, bacon, thawed out leftover Thanksgiving turkey, and tomato slices. And the cool part? I don't even have a panini press.

Taking a little inspiration from Alton Brown, I took out my heavy cast iron skillet. I set it on a burner and let it heat up while I assembled my sandwiches. I loaded up four lovely soft bulkie rolls with the goods, and set them on a regular grill pan over medium-high heat. Then, MORE HERE

What is funny about panninis is they are smashed sandwiches. I remember when we would ride the school bus and it was standing room only. Someone would always fall over and squish someone's lunch bag. Then you would hear, "Ewww, you just squashed my lunch, now my sandwich is ruined." Well, good news is, now it is just a pannini!
