Q: In a recipe for Overnight Oatmeal by Alton Brown, it calls for "steel cut oats." What is that? I know it isn't instant, but what is it exactly? ...

I love steel cut oats, but am often too lazy to cook them(not a morning person). I love oatmeal in general, with the exception of instant, just the wrong texture for me. My favorite "everyday" oatmeal is old fashioned rolled oats.

But nothing can match the nuttiness of the steel cut!

Steel cut is a very old process to just "cut" the oat ban in half or thirds but does not "roll" it flat.
It has a consistency of "grape-nuts" and takes about 30 minutes to cook in boiling water.
Definitely not instant!
The nutritional numbers are the same as rolled oats and instant oak (at least on the McCann's brand)

You can put them in a mini crock pot overnight and wake up to a hot breakfast.

Not being a crock pot owner or user, that never occured to me but sounds like an easy way to cook them without the fuss of stovetop prep and tending.
