Can you expound a little on your comment above? I'm having a hard time figuring it out. Do you mean she adds either to mashed potato dough or the dough that Paula made for her chocolate egg? Either way, adding bread to it sounds really odd.

Yes that's her. Her recipe for toasting bread has instant potato flakes as an ingredient for making the bread.

Oh, now that sounds better. One of my favorite recipes for homemade bread calls for instant mashed potato flakes. I think, logically, it's probably a more stable product/ingredient than using real mashed potatoes which can always turn out differently due to the amount of moisture in them.

She really studies the science of food that helps perfect a recipe. I have loved her book so far. I am learning a lot.

I see that the King Arthur Flour company has potato flour. I think I am going to get some of that and try it.
