Copper River Salmon is the BEST! It is something I look forward to every spring.
If you can find it at a restaurant, or your market, it's a must try fish...delicious!

I just love smoked salmon, when I use to drink, it was smoked salmon, a pack of saltines, a pound of cheese and a 6 pack of beer (to start with) for me did not care what anybody else got. Now days it is smoked salmon, water crackers, and a glass of ice tea, that is what happens when you quit drinking. But at least I remember what the salmon taste like now. Will have to look into this copper river salmon, what makes it so good ?

It's wild salmon from the cold waters of Alaska...really expensive, but worth it once a year.

The Good Eats episode, Where there's smoke, there's fish, caused me to venture in smoking salmon. And I now loved it!! Smoke it several times during the summer.

I don't smoke it in a cardboard box ala Alton (I have a real smoker), but I use his method for curing the salmon and he did inspire me to make it

I'm really looking forward to this episode!

Copper River salmon should be eaten as is...meaning don't smoke it. The flavor is just buttery and delicious!
