When he made the beef ribs in the immersion circulator, then plated them, then taunted the audience with them, he placed the plate in front of the seats on his left. After he did that, he got down on the stage floor and started eating the ribs in front of everyone!



Before the demo, when we were waiting for him, Alton started goofing around behind the big screen. At the time it was running pix of Alton. He started doing shadow puppets. Sometime during this, he popped his head out from behind the curtain. Just as he did, I turned and saw him! I think he saw that I saw him and he ducked back behind the curtain.
