    Your Pad Thai or Mine?

Who saw tonights episode "Your Pad Thai or Mine?"?

I think this is one of the most excellent Alton Brown ( Good Eats ) episodes ever, perhaps due to the fact that I have been trying to refine my Thai cooking for oh, about 8-9 years now. I love the quote that every single chef in Thailand has his/her own recipe for Pad Thai, as that's probably a good example of the fact that you can't really go wrong with trying your own Thai food. I have found that the combination of spice (which I love) and sweet and sour causes a very wide margin for error. As far as I am concerned, Alton Brown is the Food God.

I haven't tried this recipe, but I do like this episode. What I liked about it was that AB got us out of the megamart and into an ethnic store! My favorite was when he tells us about fish sauce then smells it, that cracks me up every time.

When I was in Phuket Thailand, I had some absolute killer Pad Thai.

The funny thing about the store he was at, it looked almost exactly like the asian stores we haunt here, in Houston and Austin. Asian stores hold a treasure trove of exotic items for people toying with something new. So glad I have an experienced tour guide by my side when we visit them...

I absolutely LOVE Your Pad Thai or Mine. I grew up on Filippino food so generally love all Asian cuisine.... and it's really the only "food genre" that I can cook with confidence. And the only place to get the REAL STUFF is at the Asian / International grocery stores. So I'm THRILLED that Alton gave the spotlight to those shops. They're often filled with things that make me scratch my head in bewilderment, but they're definitely a treasure trove of (for lack of a better term), good eats.

That's true. I wish a lot more of the shows would give us some Asian food tips.

I agree.... there's definitely a market for it. It's probably one of America's favourite "take out" cuisines.

Most people think that the only way that they can have Asian-style food is to go out and buy it.... when really it's so much simpler than that! I think once people are just as knowledgeable about what goes into the different styles of Asian cooking, that they'd be more willing to do it at home.

I have been working on it. It's one I haven't quite mastered yet, so I would love an entire show devoted to it.
