Guess that's how local dishes and local food customs got started due to what's available in that region. Like here... you have a lot of seafood, pork, veggie and fruit dishes. There are chicken dishes, but no where in the amount of seafood and pork and I can't even think of one local beef dish.

One thing to remember, that if he does a show in one area, you might not have the items he is using, but if he does a show in your area, others will not have the items he is using, like getting fresh bing cherries will not happen in Southern Texas, just as fresh out of the ocean jumbo brown shrimp will not happen in North Dakota. I hope his new show takes into account a lot of locations and is mixed so we don't have it all in one area at once.

Yes I can see how it would get frustrating for people who watch the show and want to do the things he is showing only to find out they can't get things locally from 99% of the shows. He's a smart cookie though, he will probably take that into consideration.

Maybe he made this judgement by looking at those that attend his live appearances.
Why else would he make a statement like that? How would he know?
