11/17 New Good Eats -- Creole in a Bowl

I know it's early but I'm excited for another new Good Eats episode!!

I hope he clearly explains the difference between creole and cajun cooking. I'm still a bit fuzzy on it.

From what I understand--and I'm by no means an expert--the difference is this:

Creole is city food, mostly tomato based in the sauces

Cajun is country food, less tomato use


But there might be more to it than that! Let's call for a nutritional anthropologist

That's what I've always heard... Creole is city and Cajun is country or peasant food. Creole also is based on French traditions and is more refined and subtler. Cajun cooking was developed by the Acadians after they were ran out of Nova Scotia and settled in southern LA. It's more pungent and highly spiced.

When we were in Nova Scotia 4 years ago, they were having a big Acadian "homecoming" and learned a lot of interesting facts about them.

I'm wondering if the recipes from this episode were inspired by his FOA2 trip.
I don't have my FOA book at-hand (I'm at work) and I can't remember if there was a red beans and rice recipe in it.

I love black beans and rice! Had them at a Cuban restaurant in Florida years ago and now make them at home.
