Mashpee couple hosts grilled cheese "Throwdown"

They may be playing "Iron Chef" in Cambridge, but here on the Cape, it's the home edition of "Throwdown With Bobby Flay."
Well, more accurately, Throwdown with Grilled Cheese — no Bobby Flay included. The competition — both heated and grilled — happened one Saturday last month at the Mashpee home of Ward and Sophie Parker.
"Both my parents are really good cooks. Both cooked growing up," says Tania Myers of Cotuit.
Myers is no slouch herself around an oven. Proprietor of Zosia Organics, a line of holistic, toxin-free skin-care products, Myers says she's been spending a lot of time at home — specifically in the kitchen — since having a baby four months ago. She recently entered a Food Network challenge, submitting cookie and chocolate cake recipes for "Ultimate Recipe Showdown."

Funny....I tried kraut in my ham and swiss grilled cheese just the other day, just seemed right...but it wasn't...

Get your favorite sandwich bread and your favorite (meltable) cheese(s).
Butter the one side of the each bread slice
Put a frying pan over medium / medium high heat.
Assemble the sandwich with the chesses(s) inside and the buttered sides of the bread slices on the outside.
Place in the pan.
Grill until the that side is golden brown and the cheese shows signs of melting.
Turn the sandwich over and grill the other side until it too is golden brown.
The cheese should be melted and somewhat soft and a little bit runny. (That will depend on the type of cheese you use.)
Slice into triangles (my mother always did that so it must be right) and serve.

I melt the butter first and brush it on each slice.

There are a lot of people who just cannot make a good grilled cheese. When daughter was in college, friends wanted her to make them. It is challenging for some.
