Spaghetti con Zucchini - Spaghetti with Zucchini
Description: A nice vegatable pasta dishServing Size: 4Time: 25Difficulty: Easy
Ingredients:- 1 lb Spaghetti
- 2 lb of small and firm zucchini
- 1 clove of garlic - sliced
- dried red pepper flakes to taste
- Salt
- Olive oil
Preparation:Instructions:- Rinse the zucchini and slice them thin
- Heat up the oil together with the sliced garlic clove and the red pepper flakes
- When the oil gets hot, put the sliced zucchini into the frying pan
- Add salt and let it cook on medium heat until the water that the zucchini released during the cooking, has evaporated
- This takes 15-20 minutes but the important thing is not the amount of time but that the zucchini have take on a golden color but are not burnt
- While the zucchini are cooking, cook the spaghetti according to the directions on the package
- When the spaghetti is al dente, mix it in the pan with the zucchini
- Toss and serve with freshly grated Parmigiano-Reggiano cheese
