Description:
A great spicy sauce for pasta, traditionally spaghetti
Ingredients:
  1. 2 C - San Marzano Tomatoes - whole and with juices
  2. 1 Onion - Large dice
  3. 1 tsp fresh thyme
  4. 1 tsp fresh oregano
  5. 2 Garlic cloves - Crushed a bit but still whole
  6. 1 cup of oil-cured Green Olives - chopped
  7. 2 Tbs salt packed capers - fully rinsed and drained
  8. 1/4 tsp - Hot red pepper flakes or to taste - This is traditionally a "hot" dish.
  9. 2 or 3 Tbs Extra Virgin Olive Oil
  10. 2 fillets of salt packed anchovies - soaked in water or milk and chopped
Instructions:
  1. Heat the oil in a good size sauté pan or skillet.
  2. Add the anchovies and whole garlic cloves.
  3. Cook until garlic lighty browns and the anchovies break apart.
  4. Add the red pepper flakes and cook a few seconds more.
  5. Add the tomatoes, olives, and capers.
  6. Simmer for 30 minutes.
  7. Because of the anchovies, olives and capers, Do not add salt until you've tasted the finished sauce.
  8. Serve over a hard string pasta like spaghetti.
