Rigatoni in Vodka Sauce

Description:
An Italian-American classic
(Invented by a Vodka company in the 1970's to help promote the usage of thier vodka in the US)
Ingredients:
  1. 1 lb Rigatoni – Cooked 1 minute short of al dente
  2. ½ C Grated Parmesan cheese
  3. 1 C Heavy Cream
  4. 5 Fresh Basil leaves roughly torn– or 1 t dried basil
  5. 1 C Tomato Sauce – pre-made
  6. ½ C Vodka
  7. ½ C Dry white wine
  8. 2 T Olive oil
  9. 3 T Butter
  10. 4 to 5 Shallots – Finely chopped
  11. 6 to 8 Slices of thin Prosciutto – Finely chopped
Instructions:
  1. Sauté prosciutto and shallots in butter and olive oil – 3 minutes
  2. Add vine and vodka - bring to simmer and flambé until flames die down
  3. Add tomato sauce – simmer 7 minutes
  4. Add basil and cream – simmer 3 minutes – DO NOT BOIL!
  5. Add the cooked rigatoni and stir through for 1 minute
  6. Remove from heat and add the cheese
  7. Serve

I absolutely LOVE Vodka Sauce but I can't get any of my family to try it. They always say, "But it's pink!".


The version I make doesn't call for prosciotto or wine. It's so quick to make and so tasty I'm surprised it isn't more popular. I've seen a few jars of it here and there at the grocery stores but they must not sell much of it. I don't know what the jarred stuff tastes like but it's upwards of $6-$8 for a very small jar. And I doubt they put the amount of vodka in that a homemade recipe calls for. Long live big business, I guess.

I must admit that the prosciutto is my invention.
I add the wine and vodka and flambé the sauce for some drama.
I too have seen it in jar and wonder it they use vodka or vodka flavor.
