8 oz of Italian Sausage
8 oz of Orecchiette pasta
2 C of basic tomato sauce
Extra virgin oilve oil
Parmigiano Reggiano - freshly grated
1/2 C fresh parsley - chopped
Preparation:
Remove the casing on the sausage remove and crumble the meat
Chop fresh parsley to equal about 1/2 C
Instructions:
Preheat 12" frying pan oven medium high heat.
Bring pasta pot and water to a boil.
Add the Orecchiette (and a good handful of salt) to the water and boil for 10 - 11 minutes. (or follow package instructions)
Add crumbled sausage to the pan and quickly brown.
Add the sauce to the sausage, heat through and keep warm
When just slightly short of al dente, add the orecchiette to the sauce.
Stir through over high heat for that extra minute to al dente.
Turn off the heat, add the parsley, a lightly drizzle raw olive oil over the and some grated cheese.
Toss to combine and serve.
Extra cheese can be added on the plate.
