Zucchini Bread WD

| | Other: | Ingredients: | | Time: prep 30 min, bake time 60 min. Difficulty: easy Serving Size: 7 mini loaves | - 3 eggs
- 1/4 cup apple juice
- 1/2 cup veg. oil
- 1 cup white sugar
- 1 cup brown sugar
- 3 cup grated zucchini
- 2 tsp vanilla extract
- 3 cups All purpose flour
- 3 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp baking soda
- 1/4 tsp baking powder
- 1 tsp salt
- 1 to 2 cups chopped pecans
- 4 small to med zucchini's washed and grated equal to about 3 cups
| | Preparation: | - mix dry ingredients in large mixing bowl
- flour, baking powder, baking soda, cinnamon, nutmeg, nuts, sugar, salt.
- in med mixing bowl beat eggs till fluffy, then add rest of wet ingredients.
- Combine both bowls and mix slightly then add grated zucchini and mix thourghly for 4 to 5 min on medium.
- Pour mixture into 7 mini loaf pans that have been sprayed or slightly greased and floured
| | Instructions: | - Preheat oven to 325 deg
- In large mixing bowl add
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 3 cup all purpose flour
- 3 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp baking soda
- 1/4 tsp baking powder
- 1 tsp salt
- 1 to 2 cups chopped pecans
- mix well
- in a med mixing bowl add
- 3 eggs then beat till fluffy
- then add
- 1/2 cup of apple juice
- 1/2 cup veg. oil
- 2 tsp vanilla extract
- in separate bowl grate 4 young zucchini
- equals about 3 cups and add to mixture
- pour into 7 greased or sprayed mini loaf pans
- baked for about 55 min or till tooth pick comes out clean
