Zucchini Bread WD

Time: prep 30 min, bake time 60 min. Difficulty: easy Serving Size: 7 mini loaves	Description: Quick and Easy Zucchini Bread WD
Ingredients:
3 eggs 1/4 cup apple juice 1/2 cup veg. oil 1 cup white sugar 1 cup brown sugar 3 cup grated zucchini 2 tsp vanilla extract 3 cups All purpose flour 3 tsp cinnamon 1/2 tsp nutmeg 1 tsp baking soda 1/4 tsp baking powder 1 tsp salt 1 to 2 cups chopped pecans 4 small to med zucchini's washed and grated equal to about 3 cups
Preparation:
mix dry ingredients in large mixing bowl flour, baking powder, baking soda, cinnamon, nutmeg, nuts, sugar, salt. in med mixing bowl beat eggs till fluffy, then add rest of wet ingredients. Combine both bowls and mix slightly then add grated zucchini and mix thourghly for 4 to 5 min on medium. Pour mixture into 7 mini loaf pans that have been sprayed or slightly greased and floured
Instructions:
Preheat oven to 325 deg In large mixing bowl add 1/2 cup white sugar 1/2 cup brown sugar 3 cup all purpose flour 3 tsp cinnamon 1/2 tsp nutmeg 1 tsp baking soda 1/4 tsp baking powder 1 tsp salt 1 to 2 cups chopped pecans mix well in a med mixing bowl add 3 eggs then beat till fluffy then add 1/2 cup of apple juice 1/2 cup veg. oil 2 tsp vanilla extract in separate bowl grate 4 young zucchini equals about 3 cups and add to mixture pour into 7 greased or sprayed mini loaf pans baked for about 55 min or till tooth pick comes out clean
