Description:
This is a wonderful, tasty soup that is more like a complete meal in a bowl. Enjoy!

approx. 1-1/2 hours

Serving Size:
1-1/2 cups
4 boneless chicken breasts
2 C. chopped carrots
2 celery stalks, chopped
1 C. chopped onion
1 t. minced garlic
2 diced jalapeno peppers
1 t. minced garlic
1-28 oz. can diced tomatoes in puree
2 boxes of chicken stock
1 can-14.5 oz. black beans (drained)
1/2 C. macaroni shells (measure dry)
1/4 C. chopped cilantro
1 C. shredded pepper Jack cheese
sour cream for garnish
Preparation:
Preheat oven to 400 degrees
Prepare 4 chicken breast by drizzling with olive oil and seasoning with a sprinkle of Lawry's Seasoning Salt.
Bake chicken for 30-35 minutes
Cut into 1-2" pieces, cover and set aside.
Instructions:
Chop the onion, celery, carrots, jalapeno peppers and cilantro. Set aside.
Heat 3 T. of olive oil in a dutch oven or deep pan.
Add the onion, celery, carrots and cook over medium heat for about 8 minutes or until onions are transparent.
Add the garlic and cook for one minute.
Add tomatoes, chicken stock, cumin, jalapeno peppers. Season to taste with salt and pepper.
When soup starts to boil, turn down to low and cook for 30 minutes.
Add the macaroni and cook until tender, about 15 minutes.
Add the drained black beans, cilantro and chicken. Cook another 5 minutes.
Serve with shredded pepper Jack cheese and a dollop of sour cream.

That sounds good. I bet it would be nice with tortellini instead of the shells too.

That looks mouth-watering, I might give it a go for when the in-laws are here after christmas
Just one thing,

anything I can substitute that for? Unfortunately, allergies will cause problems :P

Sure you can use white beans, pinto, whatever you'd like or you could eliminate the beans altogether. You could add corn in place of beans.
