Mix the spices together in one dish, and add half of the spice mix to the bowl of flour.
Heat your canola oil (about two inches deep) up to medium high.
Season the drumettes both sides with the spice mix and put in fridge for 15 minutes. (Aaron didn't chill them in the fridge, so this is a step that we added). Add any remaining seasoning to the flour/seasoning mixture.
Coat all the drumettes in the flour/seasoning mixture and fry them, covered for about 8-9 minutes. (We were able to get 12 wings at a time in the WOK, so made two batches). Uncover and turn with your tongs, and they should be browned and ready to take out in just a few minutes. Lay on paper towels while they are cooling down. Grab ya a few more paper towels, and go to town!
