Chicky, Leafy Lettuce Wraps

Description:
Chicken salad lettuce wraps
Other: Ingredients:

Serving Size:
4 servings
  1. 4 large leaves of red or green leaf lettuce
  2. 1 C. shredded cooked chicken breasts
  3. 1/2 C. seedless red grapes
  4. 1/4 C. diced celery
  5. 1/2 C. mayonnaise
  6. 1/2 C. low-fat sour cream
  7. 1/8 t. lemon pepper
  8. decorative toothpicks
Preparation:
  1. Cooked two chicken breasts in oven until tender. Cool and shred.
  2. Slice the grapes in half.
  3. Dice the celery.
  4. Wash and dry four big leaves of lettuce.
Instructions:
  1. Mix the shredded chicken, red grapes, almonds and celery. Fold in the mayonnaise and sour cream. Add the lemon pepper.
  2. Divide mixture into 4 servings. Place on serving of the chicken mixture in the center of each lettuce leaf. Fold the lettuce over the mixture and secure with decorative toothpick.
  3. Refrigerate one hour before serving.
