Deep Frying ?

I have seen one of the Chef's when deep frying put something in the oil to keep it from burning the food, I thought it was an piece of onion but I can not remember what it was or who it was and of course trying to look something up like that is almost impossible, and I have not been able to find anything on it, has anybody seen or heard anything like this or am I just having a bad dream.

I've heard of putting a cube of bread in to test if the oil is ready.

I have heard of putting a slice of apple in the oil so it wouldn't smell as bad.
