    New hardware

    Ahhhhhhhhhhhhhhhh.



    Shun 8" chef's knife.

    Never in my life, have I worked with such a fine instrument. It's light, well balalnced and cuts with amazing ease. All my Henckles are going to be retired as I replace them with Shuns.

    I also picked up my first All Clad hardware today. A 2 Qt. saucier. I'm just going to keep on building from here.

    BTW, I'm waiting on my custom made piastra to be made. I found a guy in my town who does custom rock work. Hopefully I'll have it in a week or two.

    I love my Shuns! They are so sharp it's like they do the cutting for you with no effort on your part. So far my favorite one is the 6-1/2" Santoku knife. I'm wanting to add a serrated Shun to my collection to replace my Henckles. They get you spoiled very fast!
