Well if we get any good recipes then it might go in that forum.

I boil mine in salt water run them thru the food mill and add butter, a little more salt if it needs it and milk (cream or half and half on special occasions.) The whip them with the whisk attachment on the Mixer.

Sometimes I add roasted garlic.

I use Yukon gold potatoes. Boil them in their jackets until fork tender. Remove skins and use a potato press. Just add a little seasoning salt, butter and milk. Mix it up and they are perfect. No need to use a mixer as the press makes them smooth. Mine are mashed versus whipped.

The only time I use cream cheese is when I'm making 'mock' mashed potatoes. You use cauliflower instead of potatoes. Believe it or not, they are delicious and you cannot tell the difference. The recipe is from the George Stellar cookbook. He had the show Low Cal and Lovin' It, which is no longer on the FN. There are some great recipes in his book(s).

I sometimes add a cup of sour cream to mine, replacing some of the milk. I've never added cream cheese though...but I'd love to try it. I bet whipped chive cream cheese would be decadent!!

I have added Ricotta cheese if I am keeping them in a crockpot for a buffet it keeps them from drying out and you don't really taste it.

I have that ricer but usually end up using the food mill. I do use it occasionally though.

I have used it as a citrus juicer and banana squisher too.

I love potaotes. can't believe I did not see this link before.

I sometimes steam my potaotes insyead of boiling. Either was I add butter, salt & pepper, sometimes cream cheese or sour cream/cream fraise (sp). Maybe a bit of milk.

I am hungry!!!!

Oh yeah. Saw on a Martha Stewart On Demand show the other day I think it was Bobby Flay... made mashed potatoes with buttermilk, chives and bacon! A meal in itself.
