Making Pasta... Thomas Jefferson Style

I just thought this was neat.

I remember reading about that. He had a love for macaroni and cheese and had to find a way to make it. That is really neat He was an early Alton type.

I'm interested in that link Gop and can't get it to work. Help!

Jefferson was also credited for bringing back the first baked Alaska from France. He had his own ice cream recipe as well.

Go to the Library of Congress Website, go to American Memory and then search on Thomas Jefferson Machine and it should be the first link returned.

That's exactly the way extruded pasta is made in Italy.
The dies ("N" "O") are (traditionally) made of bronze.
Tom was very observant and well schooled in pasta making.
