Rep Power: 2 | Well I think it is like skirt steaks we have here for fajita meat, never did see that up north, think the most alike cut was a flank steak. And now you mention it do not remember any ribs up north other than a country rib, which is a thick cut with no bone. Meat cut very different for different regions of the country.

Rep Power: 10 | Guess we are fortunate. We have the Trader Joe's and Whole Foods along with many specialty stores Zupan's has a GREAT meat department with butchers on duty all the time. It's like the old time butcher market and they give you tips on how to prepare the meat.
I buy our baby back ribs at Costco. They always have a huge case dedicated to pork and beef ribs. Maybe people out here eat them more often so there is a demand? The packages are quite large, so I divide them up into smaller portions when I get home. Takes time, but worth the effort. You save $$$'s that way.

Rep Power: 1 | we have 3 Mexican meat markets and 2 regular butchers just in the town i live in, you can find a Mexican meat market in every town round here and a good butcher very close by but i buy most of my meat at Heb or kroger...and i live about 10 miles from a port so we have about 20 fish markets/mongers really close by...freshness rules!.................................  fr esh ingredients

Rep Power: 2 | When ever I do I standing (or Prime) rib roast, I carve the finished roast off the bone and carve it as a boneless roast. Then serve it.
I (the chef) get the beef rib bones! To me, it's the best eats of the roast.

Here, too! With the Pacific Ocean being so close, along with the Columbia River, there is never a shortage of fresh fish or seafood. Not to mention all the fresh produce...all the farms open in a week!!!! Cannot wait!

Rep Power: 1 | Our Giant Eagle supermarkets have butchers and the only other supermarket in the area (that has since closed down) was TOPS. A few years before they closed, they went to all pre-packaged meats so you had to buy whatever they had in their meat cases. Not so many independent butcher shops in the area nowadays. There's just one that I know of and it's about 2-3 miles away from me. My sister gets their roast beef every year for Christmas. They'll cook it for you as well as slice it up. Warmed up in a very low oven, it's really good and juicy.
