Wilted Lettuce Salad

Not sure why it just occurred to me, but I haven't had it in years I loved the stuff.

The wilted salad we use to eat was always made with bacon fat, and that is not a recommended diet item any more, although we still eat it bacon, and the fat goes in a container to be dumped later on, were the possums and armadillos can get it.

Oh my, that is one of my favorite spring treats. My mom would grow leaf lettuce and we picked it when its young and tender add green onions and make dressing with bacon drippings and cider vinegar.

Alton did a spinach salad last year on Good Eats that was very similar to wilted lettuce salad. At least the dressing was almost identical to my mom's.

We used to do that growing up too. Use raddichio and then use the hot vinegar with the salt pork...yum!

There are tons of ways to make it...wilted spinach salad will always be a favorite, tho, haven't had it in years. So many restaurants use to serve it during our San Francisco days...wonder if they still do?
