How will you make the stuffing BB?
I love stuffed peppers.
Have made them in a long time. Oldest son (17) is opposed to veggies (except peas and corn)

I haven't had stuffed peppers in a long time. Think that will be tomorrow nights supper.

I brown the ground turkey, add chopped onion and celery, a can of diced tomatoes, a bit of white wine, salt and pepper to taste with a dash of hot pepper flakes.

Made brown rice the other night and will combine it with a bit of the turkey mixture. I keep some of the mixture separate (minus the rice) to spoon over the peppers after they are finished in the oven.

Anyway, I blanch the peppers for about 3 minutes. Drain and stuff with turkey mixture. Spoon a bit of the sauce over the peppers and bake at 350 for about 45 minutes or until the tops start to crisp. Serve with the warmed sauce.

Delicious!!!

When I made stuffed peppers when the kids were young they didn't like the peppers so what I'd do was cut the peppers in half and put the filling (I sauteed the ground beef first) in the peppers and all around them as well then poured the sauce over the top and baked. That way the kids could have what they liked and hubby and I could have it the way we liked them.
