Great read Chefnot. Thanks for posting! The PBS station here in Atlanta plays two of Steven Raichlen's shows on Saturdays that I try and watch. I have one of his books too. The guy really seems to know his stuff.

I will admit I am in love with the barbecue here in Texas. It is a lot different then what I found back in New York.

Beef is definitely king in Texas, but pork is not unheard of. I lived in Texas as a young adult, and the volunteer fire dept that I was a member of, did a pig picking every summer. I actually kept my Texas residency until I retired from the Coast Guard, and was forced to become a citizen of the People's Republic of Maryland. ;-)

I don't know, I just love the Carolinia sauce. Course I've never had the Texan variety.
