I like James Peterson's "What's A Cook To Do?" Handy little book to have.

Hey mise en place wasn't on that term list

It's important to know the difference between saute and sweat. I never knew about it until watching Good Eats.
I have the CIA's Professional Chef book, its good for looking up terms. But I gotta agree with ibcheft on Visual Foods (since Alton has that one on his set
)
