Low Sodium Tacos and Shells

I used this recipe for the tacos and this recipe for the taco shells. All in all it turned out pretty well. The meat was a little spicier than we would normally like so I think next time we'll use less of the spices. The shells tasted fair enough, even though the shape was a little weird.

I thought the shells would be harder to make, but it wasn't that hard at all.

I keep telling you there is a great cook in you just waiting to come out. Maybe the low sodium diet is a push to show you that you can do it.

Heres my one question, why does ground beef have sodium in it. I thought it was just meat?

Probably as a preservative if you buy it prepackaged. Get a chuck roast and have your butcher grind it for you fresh. You could ask and make sure they don't add the preservative, but if you grind and purchase immediately I don't know why they would, but it doesn't hurt to tell them specifically you are trying to avoid sodium and be sure.

That dish on the green plate looks good! It that baby spinach it's on?

I didn't know there was salt in pre-packaged ground chuck either. I always thought it was just meat. Was this ground meat in the tray with the shrink wrap or in one of those plastic tubes?

It was meat in the tray with the shrink wrap. Yup, spinach.

Lots of pre-packaged meat has sodium in it...especially chicken.

I'll have to ask Chuck the butcher the next time I'm at the Piggly-Wiggly. They ground their chuck in house and package themselves. It doesn't come into the store pre-packaged.
