Cherry Peanut Butter Balls

  1. 1/2 cup butter (no substitutes), softened
  2. 1 cup Jif Peanut Butter
  3. 1 teaspoon vanilla extract
  4. 2 cups confectioners' sugar
  5. 24 to 26 maraschino cherries with stems
  6. Additional confectioners' sugar
  7. 2 cups (12 ounces) semisweet chocolate chips
  8. 1/4 cup shortening
Instructions:
  1. In a small mixing bowl, cream the butter, peanut butter and vanilla; mix well. Gradually beat in confectioners' sugar. Cover and refrigerate for at least 1 hour.
  2. Pat cherries dry with paper towel. Dust hands with additional confectioners' sugar. Wrap each cherry with a rounded tablespoon full of peanut butter mixture; shape into a ball. (Peanut butter mixture may need to be refrigerated occasionally while rolling cherries.) Cover and refrigerate for at least 1 hour.
  3. In a microwave, melt chocolate chips and shortening; stir until smooth. Dip peanut butter balls in chocolate; place on waxed paper. Refrigerate for at least 1 hour or until set. Yield: about 2 dozen.
  4. *Note: Reduced-fat or generic brands of peanut butter are not recommended for this recipe.

Oh my ! I have to try these already thinking of ways to make them more holiday stylish, and you have to know I just love Peanut Butter Cups and add a cherry someone get that guy a rag drool running right down his chin ! thanks for the recipe.

I love the combo of chocolate and peanut butter too and with a cherry added...

You might want to try them with white chocolate that you color green or red for the holidays.
