I've ordered over the internet before as well, but the place I usually order pizza from is a local shop and only takes phone in orders. Texting seems like too much work.

I like making it myself. But I do order occasionally. Usually if we have been working on the house or out for the day and I am too tired to cook.

I've made my own pizza before, but I have to honestly say that this is one of the few things I'd much rather just buy. I always say that the best thing about the fact that New Yorkers move to Florida in droves is that they bring their pizza making skills with them. :tongue2: We usually order pizza on Friday nights, when we are both so tired we can barely move. I almost never, ever cook on Friday. It's either take out, leftovers, or salad.

If I had a really good dough recipe, I might make it more, but I haven't found one I really like all that much.

Here is mine. We really like this one...

Crust

2 1/4 teaspoons active dry yeast
1/2 teaspoon brown sugar
1 1/2 cups warm water (110 degrees F/45 degrees C)
1 teaspoon salt
2 tablespoons olive oil (I use garlic flavored sometimes)
3 1/3 cups bread flour
DIRECTIONS
  1. In a large bowl, dissolve the yeast and brown sugar in the water, and let sit for 10 minutes.
  2. Stir the salt and oil into the yeast solution. Mix in 2 1/2 cups of the flour.
  3. Turn dough out onto a clean, well floured surface, and knead in more flour until the dough is no longer sticky. Place the dough into a well oiled bowl, and cover with a cloth. Let the dough rise until double; this should take about 1 hour. Punch down the dough, and form a tight ball. Allow the dough to relax for a minute before rolling out. Use for your favorite pizza recipe.
  4. Preheat oven to 425 degrees F (220 degrees C). If you are baking the dough on a pizza stone, you may place your toppings on the dough, and bake immediately. If you are baking your pizza in a pan, lightly oil the pan, and let the dough rise for 15 or 20 minutes before topping and baking it.
  5. Bake pizza in preheated oven, until the cheese and crust are golden brown, about 15 to 20 minutes.
Sauce

1 (12 ounce) can crushed Italian tomatoes (in the international section at the store or at an Italian grocer)
1/2 water
3 tablespoons grated Parmesan cheese
1 teaspoon minced garlic
2 tablespoons honey
1 teaspoon anchovy paste (optional but it's much better with it even if you think you don't like it)
3/4 teaspoon onion powder
1 tablespoon of dried Italian Seasoning ( or approx. a teaspoon and a half each of fresh oregano, marjoram and basil)
1/4 teaspoon ground black pepper
1/8 teaspoon cayenne pepper
1/8 teaspoon dried red pepper flakes
salt to taste
In a small bowl, combine tomato, water, Parmesan cheese, garlic, honey, anchovy paste, onion powder, oregano, marjoram, basil, ground black pepper, cayenne pepper, red pepper flakes and salt; mix together, breaking up any clumps of cheese.
  1. Sauce should sit for 30 minutes in a small sauce pan over low heat to blend flavors; spread over pizza dough and prepare pizza as desired. I love a Mozzerella and Asiago cheese mixture with my favorite toppings.

Pizza dough is easy to make:
  • 4 C All purpose flour
  • pinch of salt
  • 1 packet of yeast
  • 2 Tbs olive oil
  • enough warm water to form a dough ball
Add all ingredients but water in a stand mixer bowl with a dough hook (or a mixing bowl and mix with a spoon)
Add water, 1 C at a time until the dough comes together and starts to form a ball.
Move the dough to the counter and knead for 7 to 10 minutes and form into a ball.
Place dough ball into a lightly oiled bowl, cover and place in a warm place until the dough doubles (about 1 hour).
Punch down the ball and knead briefly to remove any big air pockets.
Separate the ball into 4 equal pieces.
Shape them into a ball and, if not using them right away, wrap in plastic wrap and then aluminum foil and freeze them for as long as a month.
You can shape the dough as thin or as thick as you like and (remember the words of Todd English) "never trust a round pizza!"

The thing that make home made pizza better than store bought is that you can buy better cheese than they use in the pizza shops.
My home made pizza has $2 to $4 of great cheese on it. If a pizza shop used that kind of cheese, I'd be paying $25 for a pizza.

You can make your own great tomato sauce too.
If you can find DOP San Marzano tomatoes, you will have great success.
Sauté 1/2 onion diced and 1/2 carrot shredded and 1/2 tsp dried thyme in 3 Tbs of olive oil until softened.
Take a can of San Marzano tomatoes and crush them by hand.
Add them and their juices to the sauté and stir them through.
Simmer for 30 minutes or until the sauce has the consistency you want.
Taste for salt and you are ready.

The next trick is to get a baking stone for you oven.
Pre-heat it for 30 to 60 minutes at the highest temperature your oven will go.
I do mine on 550 F Convection.
It will take about 6 to 8 minutes to bake a great pizza this way

I usually make everything from scratch but recently tried the Trader Joe's pizza dough (daughter recommended it). It is really good. I'd use it again. I must say, tho, that I did make my own sauce. That part I won't buy premade.

I think a lot of the pre-made sauce is too salty. And I like salty things.
