chef Boiled Peanuts

Instead of a traditional bread basket served while waiting for dinner, at a small Charleston seafood joint, we were given a bowl of boiled peanuts to munch on.* They were delicious!* And after reading the recipe for boiled peanuts on our website, I’ve decided to make them at home myself!

They must have gone to the Wreck of the Richard & Charlene in Mt. Pleasant on the East Cooper side of Charleston Co. That's one of the things they do there... bring a bowl of boiled pnuts to the table when they take your order.

I've never learned to like them... something about a wet mushy pnut. I like mine roasted. I have wondered how they would work in making a hummus tho. Hummm...

No they are still in nut form, it's just like eating a wet peanut that has soaked up water till it's soft. I like mine roasted better also.

My response was to using the peanuts as hummus....once they are smashed up, they would peanut butter.

Ahh okay, I am not sure about that one. Since they seem a little bland when they are boiled maybe the spices would take over.

I don't think they would be like peanut butter because boiled peanuts don't seem to have the oil in them like a raw or roasted peanut. Their texture reminds me of a chickpea, so that's why I thought of making a hummus with them. I just might have to experiment.

Guess I won't have to experiment. Did a Google on "boiled peanuts hummus" and pulled a bunch of them like this one from Southern Living magazine.

Ingredients

1 cup shelled boiled peanuts
2 tablespoons tahini
2 tablespoons fresh lemon juice
1 tablespoon chopped fresh parsley
1 teaspoon minced fresh garlic
1/4 teaspoon ground cumin
Pinch of ground red pepper
2 tablespoons olive oil
Garnishes: olive oil, shelled boiled peanuts
Pita rounds or pita chips

Preparation

1. Process first 7 ingredients in a food processor until coarsely chopped, stopping to scrape down sides. With processor running, pour olive oil through food chute in a slow, steady stream, processing until mixture is smooth. Stir in up to 5 Tbsp. water, 1 Tbsp. at a time, for desired spreading consistency. Garnish, if desired. Serve with pita rounds or pita chips.
Yield

Makes 1 cup
