The yucca can be cooked in escabeche. With vinegar, oil, peppercorn, onions, garlic, olives, laurel leaf. Some people add carots for color. Boil the yucca separtely in salted water, cut in chunks and marinate. Great as hors d'oeuvres or tapas.
