			<content:encoded><![CDATA[<div>I just saw the "Another Man Food Show" episode, and for the first time since the inception of Good Eats, saw AB advocating something that in my experience just doesn't work. <br />
<br />
After many years of trying to find a way to make hash browns from freshly shredded potatoes, I finally discovered what the secret is. And, as numerous pans of grey, gummy hash browns can attest, it is <i>not</i> simply squeezing the moisture out of the potato shreds.<br />
<br />
As I thought this <i>was</i> the key for a long time, I had tried various methods of doing this, even up to the point of buying a ricer to squeeze the moisture out. I finally saw the light, however, in a video by Chef Todd Mohr. The secret is not to remove the moisture, in fact it is nearly the opposite. The key is to rinse the potato shreds by filling the bowl they are in with cold water, and then dumping those contents into a strainer, dumping the shreds back into the bowl, refilling the bowl with water, and so on, until the water that runs off the potatoes runs clear. This rids the shred surfaces of excess starch, which is what causes the grey gumminess. <br />
<br />
This method, of course, flies in the face of the "common knowledge" one that AB showed, and no doubt this is why it took me so long to discover a method that actually worked.  I was a bit disappointed in AB, but I guess one thing in ten years that I know from experience doesn't actually work is a pretty good record. :)</div>

Now, I don't know how anyone else feels, but this, combined with what I've heard Alton say, both in interviews and when my fiance and I saw him last month, leads me to believe that  there's a good possibility that his contract won't be renewed next year.  I'm sad about this, but I can understand why.<br />
  After my finance and I attended his book signing, Mark(who knew who AB was, and found him amusing, but that was about it) was so impressed with the man, and his knowledge, that he decided to make the investment and purchase the Ultimate Good Eats DVD collection from the FN site.   One of the main reasons, (other than the fact that I promised him I would eventually cook everything on each DVD) :loli:was that a review of the set had mentioned that there was a  recipe booklet included with each DVD).  <br />
  Imagine our disappointment then, when we received the set, but the booklets were nowhere to be found.   Mark immediately wrote to FN, explaining the problem, and received a reply the following day telling him that they would gladly replace the missing booklets.<br />
  Today, however, he received another e-mail from FN, telling him that after they had researched the issue more fully,  the DVDs in question DID not contain the recipe booklets?   Huh?  If that isn't an example of double-speak, I don't know what is.   The e mail stated that we could return the DVD's if we wanted but seeing as half of them have already been opened and watched repeatedly, neither of us wants to do that.   <br />
 I'm just letting everyone know about this, so noone else makes the same mistake as we did.<br />
And I have to say, I can't see that the man himself would be happy if he knew about it.<br />
If he goes, he will be missed, but I'm sure he won't completely disappear.   We won't let him.  :)</div>
