Citrus Marinaded Grilled Shrimp

  1. 1 lb (20 count) "jumbo" fresh wild-caught shrimp - shells on
  2. 1 medium red onion - quartered and leaves separated
  3. Red and Orange sweet peppers - cut to the same size as the onion pieces
  4. 1 Lemon
  5. 1 Blood (or any kind) orange
  6. Pepper
  7. Extra Virgin Olive Oil
  8. 8 long wood skewers
Preparation:
  1. Lay the shrimp, in one layer in a non-reactive dish.
  2. Squeeze the juice of the lemon and the orange over them.
  3. Grind some pepper to taste.
  4. Let them marinate for 1 hour or longer but no more than 3 hours.
  5. Place the skewers in a dish and cover with water.
  6. Let them soak for about 30 minutes.
  7. Pre-heat the grill to high (gas) but you will cook using an indirect heat method.
  8. Build fire with an indirect spot (charcoal or wood fired)
  9. Using 2 skewers for each, put one or two leaves of onion, then a shrimp, then a pepper piece, and so on.
  10. You should get about 4 to 6 shrimp on each set of skewers, depending on the length of the skewers and the size of the shrimp.
  11. TRICK - pierce the shrimp through the bottom of the body, where the legs are, it is softer and assembly is easier.
Instructions:
  1. After a 1 hour or so, place the shrimp on platter to transfer to the grill, pour the remaining marinade over the skewers and drizzle with olive oil.
  2. Place on the grill over indirect heat.
  3. Grill for 3 minutes and turn over, grill for 3 minutes more.
  4. Serve with a squeeze of additional citrus.
