Description:
Quick, easy and inexpensive and very tasty

20 minutes

Serving Size:
2 for dinner - 6 as an antipasto
2 lb of fresh live mussels
1/4 C of Extra Virgin olive oil
1 large onion
1 28oz can of San Marzano tomatoes
Fresh parsley
Fresh oregano
2 tsp red pepper flakes - or to taste
2 C dry white wine
Salt & Pepper
Preparation:
Clean and debeard the mussels
Peal and crush the garlic
Large sauté pan with lid
Chop the onion
Chop the oregano
Chop the parsley
Instructions:
Heat the oil in the sauté pan over medium heat
Add the crushed garlic and the red pepper flakes
Sauté until you start to smell the garlic
Add the tomatoes, reserving the can juices
Crush the tomatoes with a spoon and add some salt to them
Sauté for a few minutes to allow the flavors to blend
Add the wine and simmer for a few minutes
Bring the pan to a boil and add the mussels - cover the pan
Steam for 6 minutes but check after 4 and stir to be sure that they are all getting full exposure to the heat and steam
The mussels are ready when they open - DO NOT overcook
Discard any that do not open after 6 minutes
Transfer to a warm serving bowl and garnish with the parsley
Serve with a nice crusty bread!

Well I have made some of your dishes you have posted and
really
liked them. With the boys gone I see me having to eat the entire dish.
