    Mussels Marinara

    Description: Quick, easy and inexpensive and very tasty
    Serving Size: 2 for dinner - 6 as an antipasto
    Time: 20 minutes
    Difficulty: Easy

    Ingredients:
    1. 2 lb of fresh live mussels
    2. 1/4 C of Extra Virgin olive oil
    3. 1 large onion
    4. 1 28oz can of San Marzano tomatoes
    5. Fresh parsley
    6. Fresh oregano
    7. 2 tsp red pepper flakes - or to taste
    8. 2 C dry white wine
    9. Salt & Pepper
    Preparation:
    1. Clean and debeard the mussels
    2. Peal and crush the garlic
    3. Large sauté pan with lid
    4. Chop the onion
    5. Chop the oregano
    6. Chop the parsley
    Instructions:
    1. Heat the oil in the sauté pan over medium heat
    2. Add the crushed garlic and the red pepper flakes
    3. Sauté until you start to smell the garlic
    4. Add the tomatoes, reserving the can juices
    5. Crush the tomatoes with a spoon and add some salt to them
    6. Sauté for a few minutes to allow the flavors to blend
    7. Add the wine and simmer for a few minutes
    8. Bring the pan to a boil and add the mussels - cover the pan
    9. Steam for 6 minutes but check after 4 and stir to be sure that they are all getting full exposure to the heat and steam
    10. The mussels are ready when they open - DO NOT overcook
    11. Discard any that do not open after 6 minutes
    12. Transfer to a warm serving bowl and garnish with the parsley

    13. Serve with a nice crusty bread!

    Well I have made some of your dishes you have posted and really liked them. With the boys gone I see me having to eat the entire dish.
    There is room for all God's creatures....right next to the mash potatoes.
