Smoked Bacon Butter Sauce

Description:
The following butter recipe is great with almost any cooked seafood, especially shrimp and lobster.

Serving Size:
6 to 8
  1. 3 ounces of double-smoked bacon, finely diced
  2. 1 large shallot finely diced
  3. ¼ cup chicken stock
  4. ¼ cup dry white wine
  5. 1 tablespoon cream
  6. 6 ounces (¾ cup) unsalted butter, chilled and diced
  7. Salt and pepper
  8. Fresh lemon juice
Instructions:
  1. Cook the bacon in a small pan until the fat has rendered.
  2. Place it on a paper towel to drain.
  3. Put the shallots, chicken stock and wine into a small saucepan and simmer until almost dry.
  4. Add the cream and start to whisk in the butter about an ounce at a time.
  5. Allow the sauce to come back to a simmer after the final ounce of butter has been whisked in.
  6. Remove from heat and continue to whisk for a moment longer.
  7. Add the bacon and blitz the sauce with a hand blender.
  8. Correct the seasoning and add lemon juice to taste.
  9. Keep the sauce warm until ready to serve.
  10. Any combination of chives, tarragon, parsley, chervil and coriander would be a welcome addition.
