"The thing I see happening most is stronger flavors across the board. We'll see a lot of stronger aromas, more crispiness, crunch, freshness. A lot of salts with different flavorings. A lot of vinegars with more body and flavor, almost with a little pulp. We're already seeing richer chocolates with flavorings like chili spice and curries in them. Consumers are more willing to go out and sample global food — Argentine, Brazilian, Puerto Rican, and countries that have spicy cuisines, like India. Consumers really are branching out, and that's a great thing.
