Chocolate bakery cakes always seem drier to me than white or yellow. When the kids want a character cake from a bakery for their birthday I usually get marble and the chocolate yellow swirling seems much more moist.

Warren always seemed terribly awkward whenever he tried to show how to do anything with cakes. As I recall, his show was all about interviewing other bakers and showing their techniques, not really having to perform his own cake tricks. I always figured he owned the bakery but left all the baking and decorating up to a staff.
