Rep Power: 10 | FN Hygiene On other posts we have said things about FN celebrities and their hygiene in the kitchen.
Well, if anyone caught the South Beach show, Paula takes the spat - chu - lah and sticks it in Tyler's mouth (she also tastes from it) and then puts it back in the mixture!!! No spoon was used to keep it sanitary.
She does this on her Paula's Party as well....come on FN does the Board of Health have to be called in???? Yuk!

Rep Power: 2 | There's a episode of Good Eats (and I'm blanking on which one it is... I know, and I call myself a fan) when Alton takes a spoon and re-samples whatever he's made and says something like... Yes I got a clean spoon! |

Rep Power: 2 | Paula does that on her show cooking with Bobbi, she takes a taste and then goes right back to stirring the pot with the big spoon, Bobbi on the other hand uses a small spoon and you see him put it on the counter behind him. I thought at the time well it was half right. I see so many hygiene mistakes that you wonder, where are the show advisers and how do they not notice this. sometimes the host try to play it off like, since it is family cooking it is okay, WRONG, there is people in my family I would not eat after. Seems like the more we see new shows the worse it gets. I can see ever once in awhile there would be a slip up, but this is getting to be a consistent thing, and these are not old show but the new ones. What I find ironic is you look at the test kitchen and there are sinks all over for washing stuff, you would think the staff back there would say something but then maybe they do not get to see the shows.

Rep Power: 2 | The correct way to taste from a pot (or any other not yet served container) is to keep a tasting spoon in your apron pocket.
Then when you are ready to taste, take the stirring spoon and collect a sample of the dish, pour it into your tasting spoon and taste.
Put the spoon back in your apron pocket and use it over and over to your heart's content. Just don't ever put it in the food; just keep pouring from the stirring spoon to the tasting spoon.

Happy to know I'm doing something right.

I'll bet that's how the correct way was developed.
A bright home cook like you did it and taught it to the world.

Rep Power: 10 | Thanks, Clove! I would have loved to take credit for it, but I'm sure it has been around for a long time. Even if I'm cooking for myself, I still taste things that way. It's a good habit to get into.

Sounds like they are not watching the right people. | If you really watch FTV (and all TV cooking) shows for cross-contamination errors in prep and cooking, you'll see that the BoH would have a field day just watching from home and mailing the citations to the shows.
Watch how they handle raw meat and poultry (boards, knives, hands etc.)
Their easy out is that they don't usually serve that food to anyone.
The (swap out) kitchen really does all of the work and prepares the food for the audience.
I've got to get me one of those!
