Mr. Corson, standing above, who calls himself a sushi concierge, is holding classes at Jewel Bako in the East Village to show Americans how to navigate the sushi bar as Japanese connoisseurs do.

    My daughter was told when she went to Japan COULD eat it with your fingers, but people usually use chopsticks.

    I lived in Japan for a time, and we usually used chopsticks.
