These crust recipes? Easy as pie The Argus Leader - Nov 14 12:00 AMI love to bake. Cookies, brownies, cupcakes - you name it, I bake it from scratch. Except for pie. Making a pie crust from scratch has always seemed a little daunting, with its weird ingredients like lard and vague instructions like "blend the flour and butter until the mixture resembles coarse meal." This is the BEST pie crust recipe I have ever used and now my standard. It's from either Gourmet or Bon Apetite magazine.

Single Crust

1-1/4 C. flour
6 T. COLD, unsalted butter, cut into 1/2" cubes
2 T. COLD, vegetable shortening (Crisco)
1/4 t. salt
3-4 T. COLD milk (I use whole milk...NOT water)

Using the food processor, pulse dry ingredients until they look like small peas.
Add milk while food processor is on and until dough forms a ball.
Take dough out of processor and press into a flat disk on plastic wrap.
Refrigerate at least one hour.
Lightly flour a board and roll out to desired size for a single crust pie.

It is so good that people want to eat the crust first. Kind of like shortbread without the sugar. Excellent!
